Recipe: Tender Pie Crust

Ingredients
Qty. Unit Ingredient
2 c all purpose flour
2 TBSP sugar
1/2 tsp salt
1 c chilled unsalted butter, cut into half inch slices
7 TBSP ice water, divided
1 1/2 tsp fresh lemon juice

Instructions
1) Blend flour, sugar, and salt in processor for 5 seconds.

2) Add butter.

3) Using on/off turns, cut in butter until coarse meal forms (some butter may remain in 1/4 inch pieces).

4) Mix 6 Tablespoons water and lemon juice in small bowl. Add to processor.

5) Using on/off turns, blend until dough comes together in moist clumps, adding more water by teaspoonfuls if dough is dry.

6) Gather dough into ball; divide evenly into 2 pieces.

7) Shape each into a disk, wrap and chill at least 2 hours and up to 1 day.

2 crusts
