Recipe: Sweet Cheese Panzotti

Ingredients
Qty. Unit Ingredient
8 ea wonton wrappers
1 c ricotta cheese
1/2 c golden raisins
1 TBSP honey
3/4 tsp ground cinnamon
1/8 tsp ground nutmeg
3 TBSP butter
1 TBSP fresh sage leaves, or 1 tsp dried
1/8 tsp coarsely ground pepper

Instructions
1) Mix cheese, raisins, honey, cinnamon, and nutmeg.

2) Spoon about 1 Tablespoon ricotta mixture onto center of each wonton.

3) Moisten edges of wrappers lightly with water.

4) Fold diagonally in half over filling, forming a triangle; press gently around filling to seal.

5) Heat 2 Tablespoons of the butter, the sage, and the pepper in a 10-inch skillet over medium heat until butter is melted.

6) Add half of the panzotti. Cook about 5 minutes, turning occasionally, until tender.

7) Remove panzotti from skillet; keep warm.

8) Melt remaining 1 Tablespoon butter in skillet. Add remaining panzotti.

9) Cook about 5 minutes, turning occasionally, until tender.

10) Drizzle panzotti with any remaining butter mixture.
