Recipe: Chicken Biscuit Bake

Ingredients
Qty. Unit Ingredient
1/2 c all-purpose flour, plus 1 tablespoon
1/2 tsp baking powder
3 TBSP cold butter
2 TBSP beaten egg
1/4 c buttermilk
2 TBSP butter
2 TBSP flour
1 c milk
1 TBSP chicken boullion granules
1 ea poultry seasoning
1 ea onion powder
1/2 c cubed cooked chicken
1/2 c frozen mixed vegetables
1/2 c small-curd cottage cheese

Instructions
1) In a bowl, combine the flour, baking powder and salt; cut in butter until mixture resembles coarse crumbs.

2) Set aside 1 teaspoon beaten egg; stir remaining egg into buttermilk.

3) Add to crumb mixture; stir until dough forms a ball.

4) Turn onto floured surface; knead 10times or until smooth.

5) Divide dough in half. On a lightly floured surface, roll out one portion to fit the bottom of a greased 1-qt. baking dish. Place in dish.

6) In a small saucepan, melt butter over medium heat. Stir in flour until smooth.

7) Gradually add the milk, boullion, poultry seasoning and onion powder.

8) Bring to a boil; cook and stir for 1 - 2 minutes or until thickened. Remove from the heat.

9) Stir in chicken, vegetables and cottage cheese. Pour into baking dish.

10) Roll out remaining dough to fit top of dish; place over filling. Brush with reserved egg.

11) Bake at 350-degrees for 30 - 35 minutes, or until golden brown.
