Recipe: Olive Garden Copycat Zuppa Toscana

large russet baking potatoes, chopped and roughly mashed |

large onion, chopped |

crumbled bacon |

kale or swiss chard, optional |

Instructions
|
1) Peel and chop potatoes into small chunks. Cook in boiling water for 10 - 20 minutes. Mash slightly.
2) Cook sausage in 300°F oven for approx. 30 minutes.
3) Drain sausages on paper towels and cut into slices.
4) Place onion, potatoes, chicken broth, water, and garlic in pot, and cook on medium until potatoes are done.
5) Add sausage and bacon.
6) Salt and pepper to taste.
7) Simmer for another 10 minutes.
8) Turn to low heat.
9) Add kale and cream.
10) Heat through and serve.
